The grapes have been cultivated since ancient times and include many grape varieties. Most of the production is used to make wine, then for the table to be consumed as fruit.
Italy and France were for years the two largest producers but were overtaken by the United States and especially the new number one China!
We are particularly interested in raisins and the main one is sultanas, also called Thomson Seedless in the USA. It can be green or yellow with added sulphites.
We find it in many pastries (Panetonne, raisin breads, ...), dishes (tajines, quails with grapes, ...) and in most mixtures of dried fruits for aperitifs.
